I'm on a new recipe kick. A co-worker gave me the link to Gina's Skinny Recipes, and I've found tons of yummy recipes to try. When I found shrimp on sale I knew that this recipe was going to have to be on the meal plan for the week. This was simple to throw together and it was delicious with a whole wheat baguette and a salad. Click here for the source recipe including gorgeous pictures and a printable option. Below is my slightly tweaked version.
1 tbsp extra virgin olive oil
1 tbsp butter
1 tsp anchovy paste
1 pound large shrimp, peeled and deviened
6 garlic cloves, chopped
1/2 tsp crushed red pepper flakes
3 tablespoons of capers
1 cup of white wine
1/2 cup clam juice (found next to the tuna at the grocery store)
Juice from one lemon
salt and fresh pepper to taste
generous handful of chopped parsley
Heat olive oil and butter in a skillet. Add garlic, pepper flakes, and sauté 2-3 minutes. Add wine, clam juice, lemon juice, anchovy paste, parsley, salt and pepper, and stir. Cook for another 2-3 minutes. Add shrimp and cook for 2-3 minutes. Do not overcook the shrimp or it will become tough and chewy.
Makes 4 servings
