Lemon Feta Chicken with Oregano (5 P+)

Here's another great recipe from Gina's Skinny Recipes.  I made this last night using boneless-skinless chicken thighs.  If you use boneless chicken reduce the cooking time to 20-25 minutes before broiling.  Serve with Tomato-Mushroom-Zucchini Saute and some orzo pasta tossed with a little feta cheese.  The entire meal took only 30 minutes to go from fridge to table, and it got rave reviews from my hubby.

Ingredients
8 skinless chicken thighs
juice of 1 lemon
2 tsp garlic powder
3 tsp oregano
salt and fresh ground pepper
1/3 cup feta cheese, crumbled

Directions
Preheat oven to 375°. Trim all fat off chicken. Season chicken with salt, pepper, oregano, and lemon juice. Place in a roasting pan and bake for about 35 - 40 minutes. When chicken is cooked, remove from the oven and sprinkle with feta.

Broil on low for about 2-3 minutes, until cheese is golden brown (careful not to burn)

Makes 4 servings
